
Skillet Tilapia with Sautéed Spinach
Directions

Mince garlic and ginger

Slice shiitake mushrooms length-wise

Shorten spinach if desired

Combine soy sauce, vinegar, sesame oil, ginger, and garlic in a bowl and mix

Spread 1/2 of sauce mixture on fish fillet

Heat up oil over medium-high heat and cook both sides of the fish thoroughly

Remove the fish from heat

Add oil and sauté mushrooms for 1-2 minutes (until soft)

Add spinach and remaining sauce mixture to the pan
-
When spinach is wilted, push everything in the pan to one side and return the fish to the heat

Cover and cook for another 30-60 seconds
-
Serve with brown rice for a quick and complete meal

2 tsp minced ginger

1 pound tilapia/other thin white fish fillet

2 shiitake mushrooms (optional)

1 tbsp low-sodium soy sauce

2 tsp rice/black vinegar

1 tsp sesame oil

vegetable/canola oil
