Skillet Tilapia with Sautéed Spinach

Directions

  1. Mince garlic and ginger

  2. Slice shiitake mushrooms length-wise

  3. Shorten spinach if desired

  4. Combine soy sauce, vinegar, sesame oil, ginger, and garlic in a bowl and mix

  5. Spread 1/2 of sauce mixture on fish fillet

  6. Heat up oil over medium-high heat and cook both sides of the fish thoroughly

  7. Remove the fish from heat

  8. Add oil and sauté mushrooms for 1-2 minutes (until soft)

  9. Add spinach and remaining sauce mixture to the pan

  10. When spinach is wilted, push everything in the pan to one side and return the fish to the heat

  11. Cover and cook for another 30-60 seconds

  12. Serve with brown rice for a quick and complete meal

Ingredients

  • 9-10 oz baby spinach or 1/2 bunch of spinach

  • 1 minced garlic clove

  • 2 tsp minced ginger

  • 1 pound tilapia/other thin white fish fillet

  • 2 shiitake mushrooms (optional)

  • 1 tbsp low-sodium soy sauce

  • 2 tsp rice/black vinegar

  • 1 tsp sesame oil

  • vegetable/canola oil
