
Broccoli Lemon Pasta

Ingredients

Salt

Basil

Oregano

¼ cup low fat cheese

½ lb brown rice/whole grain penne pasta

¼ cup olive oil
-
Zest from 1 lemon
-
Fresh lemon juice
-
1 Spoonful of minced garlic or 10 garlic cloves

Canned or freshly shredded chicken breast
-
5 cups broccoli florets
-
½ cup reduced-sodium chicken broth

Red Chili Flakes
Directions

Bring water to a boil and add penne.

Make you lemon zest by grating the side of one lemon. Make sure to only use the yellow part, as the white is more bitter.

Add olive oil to pan of medium heat. Add garlic to pan and saute until slightly brown. Add chicken and seasoning and let sit with the garlic for a minute then add broth. Let boil for 3-5 min or until broth is slightly reduced.

When there is 2 minutes left on the pasta, add the broccoli to the boiling water. Drain and add to pan with chicken.

Top with seasoning and lemon juice. Turn off heat and then add cheese. Stir to melt cheese and then serve.
