
Tofu Fried Rice
Directions

Mince garlic and ginger.

Slice green onions and carrot thinly.

Slice the tofu into cubes.

Lightly beat up one egg.

Heat up vegetable oil under med-high heat and stirfry tofu until lightly browned. Remove tofu from heat and save half for the future.

Cook egg until done and break into small pieces. Remove from heat.

Add vegetable oil, garlic, ginger, and green onions to pan. After one minute, add carrots.

Saute for two minutes. In the meantime, mix soy sauce, hoisin sauce, and sesame oil in a separate bowl.

Add rice to sauteed vegetables and stir for 2 minutes.

Add tofu, egg, and sauce mixture.

Stir until well-mixed, remove from heat, serve, and enjoy!

0.8-1 cup of overnight rice (white/brown)

1/2 box of reduced-fat firm tofu

1/2 of large carrot and/or 1 cup of peas

2 green onions
-
1 egg
-
1 tsp minced ginger
-
2 garlic cloves
-
1 tbsp hoisin sauce
-
3 tbsp low-sodium soy sauce
-
1/4 tsp dark sesame oil

vegetable oil
